6 Ripe peaches
1 Red onion
1/4 c Fresh basil; julienned
1 ts Minced garlic
1/4 c Red wine vinegar
1 Red bell pepper
1/4 c Fresh orange juice
2 tb Fresh lime juice
1/4 c Extra-virgin olive oil
Salt; to taste
Freshly-ground black pepper;

Peach And Red Onion Relish Preparation

Cut each peach into 8 slices. Cut red onion and red bell pepper in long, thin strips. Combine all ingredients in a large mixing bowl and toss. Transfer to a serving bowl; chill until ready to serve. Cover and refrigerate up to 2 days. Makes about 5 cups.
