Cooking Ingredients for Peach Melba Bread Pudding Recipe
16 oz Peach halves in juice
4 c Bread cubes
1/2 c Raisins
1-1/4 c Skim milk
1 c Egg Beaters® 99% egg
-substitute
1/2 c Sugar
2 tb Margarine; melted
1 ts Vanilla extract
1/4 ts Cinnamon
1/2 c Raspberry jam; warmed
Peach Melba Bread Pudding Preparation
Drain peaches & reserve 1/4 cup juice. Chop peaches. In a greased 13 x 9 baking dish, combine bread cubes, raisins & chopped peaches. Blend milk, Egg Beaters, sugar, margarine, vanilla, cinnamon & reserved peach juice. Pour over bread mixture. Bake at 350F for 45-50 minutes or until knife inserted in the center comes out clean. Serve pudding warm & topped with warmed raspberry jam. (Raspberry syrup can be substituted for the jam).
