Cooking Ingredients for Peach-Mint Granita Recipe

1 lb Ripe Peaches; peeled, pitted

2 ts Fresh Mint; chopped
3/4 c Fruity White Wine; *see note
1/3 c Sugar (Or To Taste)
1 tb Fresh Lemon Juice

Peach-Mint Granita Preparation

Place all ingredients in a blender or food processor and process until smooth. Strain through a fine mesh strainer and discard pulp. If sugar is not dissolved, continue to stir until it is. Pour mixture into ice cube trays and freeze until solid. To serve: Place cubes in a single layer in a food processor and pulse several times to create uniform ice particles. Repeat as necessary with remaining cubes and serve immediately in frozen stemmed glasses.
