125 g Haricot beans; soaked

250 g Lean minced beef; (8oz)

350 g Courgettes; thinly sliced

2 Medium-sized onions; chopped

1 Clove garlic; finely chopped
1-1/4 l Chicken stock; (2 pints)
2 tb Tomato pur‚e
75 g Wholewheat spaghetti; broken
-into small
; pieces (3oz)
4 tb Chopped fresh parsley
1 tb Chopped fresh thyme or 1
-teaspoon dried
; thyme
1 tb Chopped fresh marjoram or 1
-teaspoon
; dried marjoram

Beef And Bean Minestrone Preparation

Drain and rinse the soaked beans, and bring them to the boil in fresh water. Boil for 10 minutes and then simmer them for 50 minutes. Drain again. Heat the oil in a large, heavy saucepan on a high heat. Put in the beef and stir until it browns. Put in the peppers, courgettes, onions and garlic. Lower the heat and cook, stirring frequently, for 5 minutes. Pour in the stock and bring it to the boil. Add the tomato pur‚e, beans, spaghetti and herbs. Cover, and simmer for 30 minutes.
