Pre heat oven to 375 degrees. Salt and pepper room temperature roast after rubbing down meat with soy sauce. Place meat on rack in shallow pan. Roast 1 hour at 375 degrees. Turn off oven. DO NOT OPEN OVEN DOOR. Allow 3 hours in oven to complete coking time (a little longer won”t matter). About 20 minutes before meal time, turn oven to 300 degrees to warm roast.
