1 lb Dried Idaho red beans;

2 c Chopped sweet Spanish onions
2 Cloves garlic; minced
1/2 c Bacon drippings
1 ts Tabasco sauce salt
1/2 lb Monterey jack cheese
3 Doz flour tortillas; (8

Oil for deep fat frying

Petite Burrito Frijoles Preparation

Fry beans, onions and garlic in hot bacon drippings until dry and crispy. Season with Tabasco sauce and salt to taste. Cut cheese into 1/2 x 3/8 x 1 inch pieces. Cut each tortilla into four pie shaped wedges. Shape beans Into oval shapes around cheese cubes. wrap with tortillas fastening with toothpicks.
