Cooking Ingredients for Pin Oak Teal Recipe
2 Teal killed at Pin oak (or
-at least in Arkansas)
Pepper
Sauerkraut (fresh bulk style
-in jar or plastic bag)
Pin Oak Teal Preparation
Sprinkle teal (inside and out) with pepper. Stuff cavity with sauerkraut and then wrap bird in aluminum foil and cook for 10 minutes at 500o. Turn oven to 300o and cook for 2-1/2 hours. Make sure teal is wrapped properly so juice does not leak out. After cooking, turn over so juice goes throughout the bird. Meat should fall off the bone and the kraut is great.
