Cooking Ingredients for Pina Colada Fool Recipe
1 c Drained unsweetened crushed
-pineapple
1-1/2 c Whipping cream
1/2 c Sweetened shredded coconut
1 tb Coconut liqueur or rum (opt)
Mint sprigs (opt)
Pina Colada Fool Preparation
In blender or food processor, puree half of the pineapple; add to remaining pineapple. In separate bowl, whip cream; fold in pineapple, coconut and coconut liqueur (if using). Divide among 6 long stemmed glasses. Chill for 1 hour. Garnish with mint (if using). Makes 6 servings.
