1 lb Fresh Green Beans
1 sm Purple Onion; sliced &
-separated into rings
4 lg Garlic cloves; cut in half
-lengthwise
Olive Oil flavored vegetable
-cooking spray
1/2 ts Dried Thyme
1/4 ts Salt
1/4 ts Freshly ground Black Pepper
Roasted Green Beans and Onions Preparation
Vickie asked for recipies using fresh green beans. Following is very simple and is my favorite (taken from Cooking Light Cookbook 1996 ): Wash beans; trim ends & remove strings. Place beans, onion & garlic in a 13 x 9 x 2 pan coated with cooking spray. Coat vegetables with cooking spray. Sprinkle thyme & salt over vegetables; toss well. Bake at 450F for 15 minutes or until tender, stirring once.
