100 g Rocket; washed (3 1/2oz)
50 g Pine kernels; toasted (2oz)
2 Cloves garlic; peeled
50 g Parmesan cheese; grated
-(2oz)
15 g Pecorino Romano; ( 1/2oz)
6 tb Olive oil

Rocket Pesto Preparation

In a food processor combine the rocket, pine kernels, garlic, parmesan cheese, and pecorino until creamy, then gradually add in the olive oil. Chill until required. Notes: Serving suggestions: A delicious condiment which can be served in a number of ways.Simply spread on tomatoes, grilled vegetables, bread, fish or meat.Alternatively serve stirred into freshly cooked pasta.
