Cooking Ingredients for Rouille Recipe

1 Russet potato; boiled,
-peeled and broken up
8 Cloves garlic; finely minced
1 ts Crushed red pepper flakes
1 pn Saffron
5-1/2 c Extra virgin olive oil
Salt and pepper; to taste

Rouille Preparation

In a large mortar, place potato, garlic, pepper flakes and saffron and grind to a smooth paste. Add oil, 2 tablespoons at a time, working like a mayonnaise until all the oil is incorporated and sauce is smooth and creamy. Season with salt and pepper and serve in a crock.
