1 Egg; slightly beaten
1 cn (15-1/2 oz.) salmon; drained
-and flaked
4 Green onions; (with tops),
-chopped
1/4 c Cracker crumbs
1 tb Lemon juice
1/2 ts Salt
1/4 ts Black pepper
2 tb Margarine or butter
4 Hamburger buns; split and
-toasted
4 sl Process American cheese
Lettuce leaves
1 Tomato; sliced
1/4 c Tartar Sauce; (recipe
-follows)

Salmon Patty Sandwiches Preparation

Betty Crocker”s Cookbook Mix egg, salmon, onions, cracker crumbs, lemon juice, salt and pepper. Shape into 3 patties, each about 1/2 to 3/4 thick. Heat margarine in 10 skillet over medium heat until melted. Cook patties in margarine until golden brown, about 5 minutes on each side. Combine 1 cup mayonnaise or salad dressing, 2 tablespoons finely chopped dill pickle, 1 tablespoon snipped parsley, 2 teaspoons chopped pimiento, and 1 teaspoon grated onion; mix well. Cover and refrigerate until chilled. Makes about 1 cup sauce: 100 calories per tablespoon. Place a patty on each of 4 bun halves.
