8 Ripe tomatoes; seeded and
-chopped
1/2 c Cilantro leaves; loosely
-packed
2 md White onions; minced
20 ml Garlic; minced
1/2 c Fresh Italian flat leaf
Parsley; chopped
1/2 c Light olive oil
-Salt and black pepper
-to taste
3 Fresh jalapeno peppers
-seeded and minced; or
3 Canned jalapeno peppers
-minced (optional)

Salsa Roja Preparation

Combine all the ingredients in a mixing bowl. Season to taste and refrigerate at least 6 hours before serving. Serve with tortilla chips.
