-spinach
1 Envelope onion soup mix
1/2 c Fat-free sour cream
1/2 c Light sour cream
2 oz (1/2 c)shredded low-fat
-sharp cheddar cheese

Spinach Casserole 2 Preparation

Spray 2-qt baking dish with vegetable oil spray. Preheat oven to 350F. Cook spinach according to package directions; drain well. In large bowl, mix spinach with soup mix and sour cream. Spoon into prepared baking dish and top with cheddar. Bake, uncovered, at 350 degrees for 30 minutes. Heat a non-stick skillet coated with non-stick cooking spray and drop about 2 T. (about 3 inches each) into hot pan. Flatten slightly with the spatula and cook pancakes over medium heat until golden on both oven and continue cooking until all pancakes are cooked. Serve with Apple Walnut Topping. Apple Walnut Topping: 1/2 c. light brown sugar 1/2 c. chopped walnuts 2 apples, cored and chopped 1 T. orange juice 1/8 tsp. cinnamon In a skillet add all the ingredients and cook over medium high heat, stirring, until the apples are just tender and the brown sugar is melted to form a syrup. This is also great over ice cream.
