Cooking Ingredients for Spoonbread 2 Recipe
1 c Yellow cornmeal
1 tb Sugar
1 ts Salt
2 c Milk; hot
3 tb Unsalted butter
3 Egg yolks
3 Egg whites
2 ts Baking powder
1/2 c White cheddar cheese
1/4 c Swiss cheese; grated
Salt & black pepper
Spoonbread 2 Preparation
Preheat oven to 375. Butter a souffle dish (or 1-2 quart baking dish). Mix together cornmeal, sugar & salt. Stir dry mixture into hot milk in saucepan on medium heat. Turn to low & stir in butter. Remove pan from heat & beat in egg yolks & baking powder. Let cool somewhat. Stir in cheddar & Swiss cheeses. Fold in egg whites. Pour into prepared pan. Bake until golden & puffy. Serve immediately. Approximately 10-25 minutes.
