Cooking Ingredients for Springerle #2 Recipe

4 Eggs
2 c Sugar
4 c Sifted flour
1 ts Baking powder
1/2 ts Oil of anise -or-
1 -(up to)
1-1/2 ts Anise extract

Springerle #2 Preparation

Beat 4 eggs until very light (should be the consistency of cake batter). Add 2 cups of sugar gradually and beat until creamy, about 15 min. with a electric mixer (5 min. with a Kitchen Aid). Add 4 cups of sifted flour and 1 tsp. of baking powder. Stir in 1/2 tsp oil of anise ( or 1 to 1-1/2 tsp. anise extract). Roll out 1/2 inch thick on lightly floured board. Press with well-floured springerle pin or board and separate into squares. Allow cookies to dry out overnight (or at least 8 hours).
