1 tb Olive oil
4 Sirloin or fillet steaks;
-125g (4oz) – 175g
; (6oz), seasoned

3 tb Madeira or brandy
1 200 millilit half fat creme
-fraiche
1 tb Black olives; pitted and
-finely
; chopped
1 15 grams pac basil; roughly
-chopped
Steak with Madeira Basil And Olives Preparation
Heat the oil in a large frying pan over a moderate heat. Place the seasoned steaks into the hot pan, cook the steaks for 2 1/2 minutes on each side – rare; 4 minutes each side – medium; 6 minutes each side – well done. Remove the steaks from the pan, cover with foil and keep warm. Add the Madeira to the pan and cook for 1 minute. Stir in the creme fraiche, olives and basil. Pour the sauce over the steaks.
