1 tb Peanut oil
225 g Mange tout; (8oz)
115 g Oyster mushrooms; (4oz)
115 g English mushrooms; (4oz)
115 g Red pepper; cut into strips

115 g Yellow pepper; cut into
-strips

1/2 Aubergine; cut into slices
1/2 md Bok choy; cut into 1 inch
; chunks
6 Broccoli spears
1/2 c Chicken stock
1/2 tb Soy sauce
Salt
Freshly ground black pepper
2 tb Oyster sauce

Stir-Fried Vegetables 2 Preparation

Heat the oil in a wok or a large skillet over a high heat. Stir fry all of the vegetables coating them with the oil. Pour in the stock, oyster sauce and soy sauce and stir until the vegetables are ‘al dente”. Season with salt and pepper to taste keeping in mind that the soy sauce is already salty.
