Cooking Ingredients for Pumpkin Ginger Muffins Recipe

1-1/2 c Pumpkin
5 tb Applesauce – at room

2 Egg whites – whipped
1/2 c Apple juice – at room
Temperature
2 c Brown sugar – packed
1-1/2 c Unbleached flour
2 ts Baking soda
2 ts Baking powder
1 ts Salt
4-1/2 ts Ginger
1 ts Nutmeg

Pumpkin Ginger Muffins Preparation

Preheat oven at 350. Prepare muffin tins with cooking spray and flour. In a mixing bowl, combine pumpkin, applesauce, egg whites, and juice. In another mixing bowl, combine sugar, flour, baking soda, baking powder, salt, ginger, and nutmeg. Mix wet ingredients with dry ingredients just until moistened.
