Comment on Quick Tapioca Pudding with Fruit Puree Recipe by Jennifer.
We call this recipe Tapioca Jello. We made it for our children with food sensitivities ADHD etc.. It’s a great alternative to packaged Jello.
1/3cup tapioca
2 cups of juice or water
1/4 teaspoon of salt
1/2 cup of sugar (I do not add the sugar)
2 1/2 cups of pureed fruit. Fresh or canned.
Put 2 cups of juice/water, tapioca and salt in microwave. Microwave on High for 5 min, then whisk. Microwave for 2min whisk again. Continue to do this until tapioca is no longer white. Depends on how powerful the microwave is. Then add your fruit puree.
I use my “Bullet” to puree the fruit. It works great!
