i have a recipe from my grandmother (b:1879 imegrated 1920) that is simmilar. it produces a thinner, harder “cake” and does not use grease to cook (ungreased griddle). it also uses currents. she was from felling uk and called them griddle cakes. i believe she may have had some scottish ancestry (docchar)
3 C flour
1/4 C sugar
1/2 t salt
1 egg + milk to equal 1 C
1/2 lb currents
1/2 C shortening
mlx dry ingredients then currents then wet
divide
cook in ungreased griddle pan (i use iron skillet on low heat)
