1 cn (#2) sliced pineapple
2 tb Soy sauce
1 ts Salt

Red-Simmered Duck with Pineapple Preparation

1. Wipe duck inside and out with a damp cloth. Place breast-side up in a heavy pan. Add cold water to cover and bring to a boil; then simmer, covered, 1 hour. 2. Drain liquid from pineapple and add to duck, along with soy sauce, salt and pepper. Simmer, covered, 30 minutes more. Add pineapple slices during last 10 minutes of cooking.
