1 (4-lb) chicken
4 c Water
1 c Fresh mushrooms
1 c Bamboo shoots
6 Water chestnuts
2 tb Soy sauce
1/2 ts Salt
1 ds Pepper
Red-Stewed Chicken #1 Preparation
1. Wipe chicken with a damp cloth; then, with a cleaver, chop, bones and all, in 2-inch sections. Place in a heavy saucepan. 2. Boil water and pour over chicken. Bring to a boil again; then simmer, covered, 30 minutes. 3. Meanwhile slice mushrooms, bamboo shoots and water chestnuts.
