450 g Rhubarb – sliced; (1lb)
Grated rind and juice of 1

75 g Caster sugar; (3oz)
75 g Ground almonds; (3oz)
50 g Demerara sugar; (2oz)
1 tb Schwartz Ground Coriander
Rhubarb And Coriander Crumble Preparation
Place the rhubarb, orange rind, juice and sugar in a large pan and simmer gently until tender. Meanwhile mix together the almonds, sugar and Ground Coriander. Place the rhubarb in 4 ramekin dishes and top with the almond mixture. Place the dishes under a hot grill until the topping is brown. Watch carefully as this will only take a matter of minutes.
