1/2 c Oil
3 tb Chi-Chi s hot salsa
1 tb Vinegar
2 c Cooked rice

Rice Ensalada Preparation

In skillet over medium-high heat, cook Spam and bell peppers 7 to 10 minutes or until browned. Add corn. Cover. Cook 5 to 7 minutes longer or until corn is tender. Meanwhile, in small bowl, whisk together oil, salsa, and vinegar. Serve warm Spam mixture on rice. Drizzle with salsa mixture. This recipe yields 4 servings.
