1/4 lb Smoked salmon or lox; thinly
-sliced
4 sl Red onion
4 Boston lettuce leaves
Smoked Salmon with Lemon Mayonnaise Preparation
Prep: 5 min, Cook: 5 min. serves 4 Combine mayonnaise, lemon zest and capers in a small bowl and mix thoroughly. Spread mayonnaise mixture over toasted English muffin. Top with salmon, onion and lettuce and cover with other muffin half. Cut sandwich in half before serving. Per serving: calories 279, fat 13.4g, 44% calories from fat, cholesterol 15mg, protein 10.1g, carbohydrates 28.2g, fiber 1.9g, sodium 679mg.
