1/2 lb Thinly sliced speck; see

2 Ripe; juicy tomatoes
4 oz Ball whole-milk mozzarella
6 Pitted green olives;
-quartered
8 Fresh basil leaves;

Salt; to taste
1/4 c Extra-virgin olive oil
Freshly ground black pepper;

Speck with Fresh Tomatoes And Mozzarella Preparation

1. Arrange the slices of speck on serving dishes. 2. In a small bowl combine the tomatoes, mozzarella, olives, and basil. Season lightly with salt. Add the olive oil and mix everything well. Spoon this mixture loosely over the speck, season with a few grindings of pepper, and serve. NOTE: Speck is a smoked ham that is a specialty of the Trentino-Alto Adige region in northeastern Italy.
