750 g Conference pears; peeled,
-halved and

150 ml White wine; (1/4 pint)
2 tb Caster sugar
50 g Butter; (2oz)
75 g Soft dark brown sugar; (3oz)
2 tb Golden syrup
142 ml Double cream; (5 floz)
Fresh mint sprigs to
-decorate; optional

Poached Pears with Butterscotch Sauce Preparation

Place the wine and sugar in a saucepan and stir until dissolved. Add the pears, cover and simmer gently for 15 minutes, turning occasionally, until tender. Remove from the pan and allow to cool. Meanwhile, melt the butter, brown sugar and syrup in a saucepan, stirring occasionally. Boil for 2-3 minutes, then stir in the cream. Serve the sauce hot or cold with the pears.
