6 Firm pears; stems intact
1/2 ga Apple cider
1 Cinnamon stick
1 Vanilla bean; spilt
2 sl Ginger root
Mint leaves; for garnish
Poached Pears with Cider Sauce Preparation
Peel pears and core from bottom. Slice small piece off bottom so pears can stand upright. Place in bowl of cold water with the juice of half a lemon. Bring cider, cinnamon, vanilla and ginger to a simmer. Add pears and simmer covered for 15 minutes or until just tender. Remove pears to a platter. Bring cider to a boil and reduce to a syrupy consistency about 1 1/2 cups. Remove vanilla, cinnamon and ginger, and pour glace over fruit.
