Cooking Ingredients for Pork Chops with Peach Brandy Sauce Recipe
4 Pork loin chops
3 Firm peaches
1/2 Yellow onion
2 Shallots
1 Garlic clove
2 tb Olive oil
3 tb Apple juice
Salt and pepper
3 tb Peach brandy
Pork Chops with Peach Brandy Sauce Preparation
Season pork chops with salt and pepper. In bowl of food processor place chopped peaches, yellow onion, shallots and garlic. Pour in 1 tablespoon olive oil and apple juice. Season with salt and pepper and process until well blended. In large skillet, heat remaining 1 tablespoon oil over medium heat. Add peach-onion mixture and sliced peaches. Saute 2 minutes. Stir often. Remove all but about 2 tablespoons mixture from skillet. Turn heat up and add chops. Cover and cook about 10 minutes. Turn chops halfway through cooking time. Add peach-onion mixture back into pan with chops and add brandy. Simmer 2 minutes. Adjust seasoning if desired. Approximately 10-20 minutes.
