Cooking Ingredients for Portugese Green Bean Tureen Recipe
1 Mediuim onion; chopped
2 Cloves garlic; minced
4 c Water
2 c Diced white potatoed;
-(peeled if desired)
1/2 ts Salt
1/2 ts Ground black pepper
2 c Green beans; trimed and cut
-into 1/2 inch pieces,
-(about 1/2 pound)
2 tb Chopped fresh cilantro
2 tb Chopped fresh parsley
Portugese Green Bean Tureen Preparation
Hi, this is from Vegetarian Soup Cuisine by Jay Solomon. I just left out the oil. I like his cookbooks a lot. Dry sautee onions and garlic until they begin to sweat and are fragrant. Add water, potatoes and salt and pepper, bring to a simmer, cook for 20 minutes. Stir in green beans and cook for 10 – 15 minutes more. Turn off heat, stir in fresh herbs and let stand for 10 minutes. Pour soup into a blender or food processor and process for 5 – 10 seconds until smooth. Serve with warm, crusty bread.
