Cooking Ingredients for Sausage Spanish Rice Recipe

1 lb Sausage
2 tb Sausage fat
1 Onion; sliced
1 c Uncooked rice
3-1/2 c Canned tomatoes
2 c Water
1 c Diced celery
1-1/2 ts Salt

Sausage Spanish Rice Preparation

Saute sausage in large skillet. Remove sausage and pour out fat (all but 2 tablespoons or enough to fry onion and rice). Cook onion and rice in fat until golden brown. Add remaining ingredients and sausage. Bring to a boil. Cover and simmer for 45 minutes or until rice is tender. Add extra water if necessary.
