6 c Tomatoes; peeled and cut up,
-fresh or canned
1/4 c Margarine
1/4 c Chopped onions
1/4 c Chopped green pepper
Salt and pepper to taste
1 tb Sugar
1-1/2 c Toasted bread cubes
Scalloped Tomatoes Preparation
I have a recipe for Scalloped Tomatoes..which are a lot like stewed tomatoes and they are never mushy or runny. It came from a gardening booklet published by the National Association for Gardening… Cook onions and green peppers in margarine until tender. In a 2-quart casserole, mix all ingredients together, except for 1/2 cup bread cubes. Sprinkle top with remaining bread cubes and bake in pre-heated 350 degree oven for 30 minutes. Serves 6.
