1 Garlic clove; minced
1-1/2 lb Bay or sea scallops; rinsed,
-well dried
3 tb Fresh basil leaves; chopped
2 tb Fresh lemon juice
Salt and freshly ground;
-pepper to taste
Scallops with Basil-Lemon Sauce Preparation
1. In large, heavy skillet, over medium heat, melt I Can”t Believe It”s Not Butter! Add garlic and cook until softened. Do not brown. 2. Add scallops and basil and saut over medium-high heat, stirring constantly, for 2 minutes. 3. Add lemon juice and continue cooking, stirring constantly, 2 to 3 minutes longer.
