Cooking Ingredients for Seitan and Onions over Mashed Potatoes Recipe

5 Potatoes, peeled and chopped
5 c Water
1 Onion, peeled and finely
-chopped
2 ts Oil
Salt and pepper to taste
1 pk (8 ounce) of seitan, drained
-and chopped into bite-size
-pieces

Seitan and Onions over Mashed Potatoes Preparation

This is an excellent alternative to onions with beef. Place potatoes and water in a large pot ans simmer over medium heat until potatoes are tender (about 30 minutes). Drain and mash potatoes. While potatoes are cooking, saute onion in oil for 2 minlutes. Add seitan and seasonings. Stir-fry 5 minutes longer. Serve seitan and onions over mashed potatoes. Serves 3.
