1-1/4 c Medium seashell macaroni;
-uncooked
1/4 c Minced onion
1/4 c Water
1/4 c Chablis or other dry white
-wine
1/4 c Neufchatel cheese with
-herbs and spices
Ground pepper
Vegetable cooking spray
Shells with Creamy Wine Sauce Preparation
Cook pasta according to package directions, omitting the salt and fat. Drain cooked pasta, and set aside. Coat a saucepan with cooking spray, and place over medium heat until hot. Add onion; saute 2 minutes or until tender. Add water and wine, and cook 1 minute. Add cheese, and cook 1 minute or until well blended, stirring with a wire whisk. Add pasta, tossing gently to coat. Cook 1 minute or until thoroughly heated, stirring constantly. Sprinkle with pepper. Yield: 2 servings (serving size: 1 cup).
