Cooking Ingredients for Black Bean and Sausage Posole Recipe
12 oz Ground turkey sausage
1 cn Reduced-sodium chicken
-broth; (14.5 oz.)
1 cn Black beans; (15 oz.) rinsed
-and drained
1 cn Golden hominy; (14.5 ounce)
-rinsed and drained
1 cn Mexican-style stewed
-tomatoes; (14.5 ounce) NOT
-drained
1 c Frozen loose-pack diced hash
-browns
1/2 c Sweet green peppers; chopped
1/3 c Onion; chopped
1 Clove garlic; minced
1/2 ts Chili powder
1 ts Dried oregano; crushed
Black Bean and Sausage Posole Preparation
In large saucepan, brown sausage. Add green pepper, onion, garlic and cook until tender. Stir in broth, black beans, hominy, tomatoes, potatoes, chili powder and oregano. Bring to boiling; reduce heat. Cover and simmer 30 minutes. Serves 6. NOTES : Made 11-6-97. Added 1/2 tsp. more chili powder and 1 green chili, chopped. Used Jimmy Dean pork sausage.
