Cooking Ingredients for Black Bean Salad (Main Dish) Recipe

1 cn (16 ounce) black beans;
-drained and rinsed
1 bn Cilantro; chopped
1/2 c Sweet onion; (vidalia is
-wonderful, however out of
-season red will do)
1 Red bell pepper; chopped
1 c Corn kernels; (frozen are
-fine)
Juice from 5 juicy limes
Freshly ground black pepper
Mango; peeled and sliced,
-(garnish)

Black Bean Salad (Main Dish) Preparation

Mix all ingredients except mango. Chill for at least 2 hours or overnight. Serve on warmed no fat or low fat corn tortillas and a great salsa (we crave Arriba Chipolte Salsa). Garnish with mango.
