1-1/2 c Onion – chopped
1 c Rice; converted white –

1 c Green pepper – chopped
1 c Celery – chopped
1 ts Chili powder
8 oz Can whole tomatoes –
Undrain
1 ts Salt
2 c – water
3 tb Bacon bits
Skinny Spanish Rice Preparation
Melt the margarine in a heavy skillet. Saute the onion. Stir in the rice, green pepper, celery, chili powder, canned tomatoes and salt. Add the water; bring mixture to a boil. Reduce heat and simmer, covered, for about 20 minutes until the liquid is absorbed and the rice is cooked. Garnish with the bacon bits to serve.
