1 c Sugar
1 Orange ; zest of
2 pt Blueberries; washed and
-drained

Blueberry Vinegar Preparation

Place blueberries in large bowl. Cover with vinegar.let stand for 1 hour. Transfer to large, nonreactive sasucepan. Add sugar and orange zest. Bring to a boil. Reduce heat. Simmer, covered for 20 minutes. Strain, press out as much liquid as possible. Pour into hot glass jars or fancy bottles.
