Broad Bean (Vicia Faba) Preparation
An annual Old World plant in the pea family, having pinnately compound leaves, white flowers with lateral purplish blotches, and long, thick pods. Description: Large, about 1 1/4 inches long, oval-shaped, thicker at the bottom end. Where the ridge is split , there is a dark line. the color is light brown. Characteristics: Creamy texture, nutty flavor. Availability: The dried variety is available whole in skins or peeled and split and somewhat smaller in size.
