1 sm Head cabbage; cut in large

4 ts Ginger root; minced
1/2 c Vegetable stock
1-1/2 ts Tamari soy sauce
Salt and pepper; to taste
4 tb Fat-free sour cream

Cabbage And Potato Hash Preparation

Spray large skillet with cooking spray; heat over medium heat until hot. Add onion, cabbage, potatoes, carrots, garlic, and gingerroot; spray with cooking spray and saute until lightly browned, about 8 minutes. Add stock and soy sauce and cook, covered, over medium heat until vegetables are just tender, about 5 minutes. Season to taste with salt and pepper. Spoon hash onto plates; top each serving with a tablespoon of sour cream.
