1 md Onion; chopped
1 tb Fat/oil
2 c Cooked tomatoes
2 c Cooked lima beans
2 c Cooked corn
2 c Chicken or turkey; chopped
Salt and pepper to taste
Carolina Farmer s Brunswick Stew Preparation
Cook onion in fat in large pan until tender. Combine all vegetables and bring to simmer. Drain vegetables, saving liquid (add water to make 2 cups). Combine vegetables with onions, add meats, season to taste, and bring just to boil. This makes a thinner (and in my opinon, less flavorful) stew but it”s a fairly good place to start.
