2/3 c Parmesan cheese; Grated
1/4 c All-purpose flour
1/2 ts Salt
1/4 ts Ground black pepper
1 ts Paprika
1/4 c Milk
5 Catfish fillets; About 2
-pounds (up to 6)
1 Egg; Beaten
1/4 c Butter; Melted
Catfish Parmesan Preparation
1. Combine the Parmesan cheese, flour, salt, pepper and paprika in a medium sized bowl. 2. Combine the egg and milk in separate bowl, stirring well. 3. Dip fillets in egg mixture then dredge in flour mixture. 4. Arrange coated fillets in a lightly greased 13 x 9 x2-inch baking dish. 5. Drizzle fillets with melted butter. 6.
