Cooking Ingredients for Celeriac Salad Recipe
3 Medium-size celery roots;
-peeled
1 sm Red onion; thinly sliced
3 Cloves garlic; chopped
2 tb Dijon-style mustard
3 tb Sherry vinegar
1 tb Fresh lemon juice
1-1/4 c Olive oil
1 ts Celery seeds
1 ts Chopped parsley
Salt and black pepper to

Celeriac Salad Preparation
Grate the celery root and place in a medium-size bowl. Add red onion and toss to mix. Set aside. Place garlic, mustard, vinegar, and lemon juice in the bowl of a food processor. With the motor running, slowly add the olive oil. Once the oil is incorporated, add the celery seed and parsley. Season with salt and pepper. Add the dressing to the celery root mixture, and toss to mix. Chill for about 30 minutes before serving. Serves four. Converted by MC_Buster.
