4 c Radiatore pasta [3/4lb]
3 tb Olive oil
1 Onion, chopped
2 Garlic cloves, minced
1 ts Dried thyme
1 ts Dried oregano
10 oz Fresh spinach, chopped
1/4 c Stock – Vegetable or Chicken
1 ts Lemon juice
1/2 ts Salt
1/2 ts Pepper
1/2 c Light cottage cheese

In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot. Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened. Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted. Stir in cottage cheese.
