1 sm Cart creme fraiche
Butter
Caster sugar
Self raising flour

Annie s Lemon Surprise Pudding Preparation

Beat the sugar and butter with lemon rind. Beat in 2 yolks, one at a time. Fold in the flour, alternating with the milk and lemon juice. Whisk in the egg whites, fold in – the mixture may look curdled. Bake in 1/2 pint pie dish or buttered ramekin dishes Bake at 180C for about 40-45 minutes. Serve hot or cold with creme fraiche.
