1-1/4 c All-purpose flour
1/2 c Cornmeal
1/3 c Sugar
1 ts Baking powder
1 ts Ground cinnamon
1/2 ts Baking soda
1/4 ts Salt
1/4 ts Ground ginger
1-3/4 c Golden delicious apples;
-shredded
3/4 c Lowfat buttermilk
2 tb Vegetable oil
1 lg Egg; lightly beaten
Cooking spray
2 ts Sugar
1/4 ts Ground cinnamon

Apple n Spice Muffins Preparation

1. Preheat oven. 2. Combine first 8 ingredients in a large bowl; make a well in center of mixture. Combine apple, buttermilk, oil, and egg in a bowl; stir well. Add to dry ingredients, stirring just until moist. 3. Divide batter evenly among 12 muffin cups coated with cooking spray. Combine remaining ingredients; sprinkle over muffins. Bake at 400 oF for 20 minutes or until golden. REmove from pans immediately. Serve warm. Yield: 1 dozen.
