3 tb Quick-cooking tapioca
1/8 ts Salt
1 Egg; beaten
2-3/4 c Chocolate flavored skim milk
1 ts Vanilla
Chocolate Tapioca Pudding 2 Preparation
Mix all ingredients, except vanilla, in medium saucepan. Let stand 5 minutes. Heat to boiling, stirring constantly. Remove from heat; stir in vanilla. Let stand 20 minutes; stir. Refrigerate until cold. Per serving = 107 calories, 2 gm fat, 7 mg cholesterol, 126 mg sodium, 12 gm carbohydrate, 4 gm protein Exchanges: 1 bread.
