1 ts Cornflour
110 g Caster sugar; (4oz)
375 ml Single cream; (13fl oz)
300 ml Double cream; (10fl oz)
Cinnamon Ice Cream 2 Preparation
Blend yolks, sugar and cornflour together in a large bowl with a little single cream. Grind the cinnamon sticks. Bring rest of single cream to the boil in a large pan with the ground spice. Pour boiling cream on to the egg mixture, whisking vigorously all the time until the custard thickens. Allow to cool. Whisk double cream to a soft flop and fold into the cool custard.
